Dave’s chutney recipes

As a hobby I make chutney – and usually I don’t follow a recipe, I just make it up as I go along, which I like – and usually my chutneys come out quite well. People then ask me what the recipe was to which I have no idea – so I am going to start recording the ingredients used each time on this area in my blog so that I have a record.

Plum and ginger chutney – 30th August 2019

1.6kg plums
2 onions
160ml malt vinegar
300g sultanas
2tsp ginger
2tsp crushed chilli
1tsp caraway seeds
500g sugar

Spicy Green Tomato Chutney – 28th October 2018

350ml malt vinegar
2.9kg tomatoes

Fruity green tomato chutney – Sep 12

300ml malt vinegar
1lb green tomatoes
1 onion
2 tsp turmeric
1 tsp cayenne pepper
3 tsp cumin
2tsp coriander
500g mixed dried fruit
450g sugar

Tangy green tomato chutney – Sep 12

This came out slightly runnier than planned so could have maybe used less vinegar or added some apples.

2tbs ground coriander seeds

Rhubarb & Red onion chutney May 12

2lbs rhubarb
4 red onions
8oz pickling vinegar
100ml Balsamic vinegar
4tbs crushed coriander seeds
6tsp ground ginger
1.5 tbs chilli powder
9oz sultanas
1.75lb white sugar
2oz molasses

Spicy Green Tomato and Apple chutney Oct 11

2lbs apples
300ml distilled vinegar
4 sticks celery
4lbs green tomatoes
3tbs crushed coriander
3tbs chilli flakes
2.5tbs ginger
1tbs ground cinnamon
1tbs caraway seeds
3lbs sugar
5oz Molasses

Note – I would normally have used a little more sugar but had run out, hence the use of the molasses, however still came out OK

Apple and celery chutney Sep 11

1.1kg peeled and chopped apples
1 clump celery
200g mixed fruit
2 onions
1.6kg sugar
200ml white wine vinegar
2 tbs ground ginger
2 tsp crushed chillies
1 tsp nutmeg
2 tsp Jamaican pepper
2 tsp cumin seeds

Spicy rhubarb chutney Jul 11

750g rhubarb
2 large baking apples
3 Onions
2.2 kg sugar
500ml malt vinegar
2 tbs crushed coriander seeds
1.5 tbs ginger
2 tbs cumin seeds
1 tbs crushed chilli flakes

850g plums, stoned and chopped
150ml white wine vinegar
350g apple
200g onion
300g brown sugar
200g raisins
200g dried apricots
1tsp caraway seeds
1.5tsp mixed spice

Plum and ginger chutney Aug 10

900g of plums stoned and quartered
100ml white wine vinegar
300g apple
190g onion
2 cloves garlic
150g raisins
80g fresh fennel root
12 cardamom pods
6 cloves
3 tsp ground Ginger
1tsp chilli flakes
1tsp nutmeg
450g sugar
1tsp salt

  2. These look great i have a brillinat one for Churney in the raw if you are interested, its a bit like pickali (but better)

    • Hi Mandy, good to hear from you. Yes – always interested in other recipes if not too much trouble.

      • Chutney in the Raw (makes approx 9lb)

        1 Marrow – peeled and cored, then cubed
        1 cucumber – cubed
        3 large carrots – grated
        3 onions – grated
        1 cauliflower – separated in small sprigs


        • Prepare vegetables and place them in a large bowl

        • Sprinkle 10 oz of salt over the vegetables and add 5 pints of water, soak overnight

        • Rinse the vegetables under running water, press out the water.

        3oz flour
        ½ oz curry powder
        1 ½ oz mustard powder
        ½ oz tumeric
        2 pints malt vinegar

        • Put all of the dry ingredients into a saucepan
        • Blend in the vinegar a little at time (as in making a sauce), bring to the boil.
        • Add 1 ¼ oz sugar and thicken for 5 minutes.
        • Add the vegetables and boil for 5 minutes.
        • Pot.

  4. can someone please tell me – are these recipes the 3-4 hour open simmer type or the 45 minute quickie type that i see on the net?? sorry – am new to this. sitting surrounded by boxes of pears in Devon! Paul
